Malai kofta recipe

Ingredients

  • Boiled potato – 2
  • Grated paneer – 100 gm
  • Green chili – 1
  • Red chili – 1
  • Coriander leaves – 1 cup
  • Salt to taste
  • Red chili powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Kasoori methi powder – 1 tsp
  • Coriander powder – 1 tsp
  • Garam masala powder – 1 tsp
  • All purpose flour – 1/4 cup
  • Oil for frying kofta boals
  • Cumin seed – 1 tsp
  • Black pepper seed – 8-10
  • Bay leaves – 1
  • Clove – 2 pcs
  • Cinnamon – 1
  • Cardamon – 1
  • Ginger – 1 inch
  • Tomato – 2 chopped
  • Cashew – 1 tbsp (Chopped)
  • Khoa(milk solid)/ condensed milk – 1 tbsp
  • Cream – 2 tbsp

Direction

STEP 1

 First of all take a bowl , add two boiled potato and mashed them properly. Now add 100 gm grated paneer ,1 chopped green chili, 1 tbsp coriander leaves,salt to taste 1/2 tsp red chili powder, 1/4 tsp garam masala powder and 1/4 cup all purpose flour. Now mix it well and make a dough.Now take little portion of dough and roll it in round shape  and coat it with all purpose flour. Now repeat the process make remaining balls.

STEP 2

Now turn on the flame,take a pan and heat oil for frying balls. Once the oil is heated put balls in it and fry it until it turns into light golden brown.Once it fried properly take it out in kitchen towel.

Now heat a pan and add 2 tsp oil in it and add all the raw spices (cumin seed,black pepper seed,bay leaves,cloves,cinnamon and cardamom) . Fry these spices for 30 seconds and than add  red chili, ginger ,chopped Cashew and milk solid(khoa) or condensed milk and mix it well. Now add chopped tomato ,salt to taste, turmeric powder , 1/2 tsp garam masala powder. MIx ir well and fry it for 10 minutes on medium flame. After 10 minutes turn off the flame and grind these masala in grinder.

 ( filter the mixture in strainer)

FINAL STEP

Now heat a pan , add 1 tbsp butter and 1 tsp red chili powder and fry it for 10 seconds on low flame. 

After 10 seconds add mixture in it , cover the lid and cook it for 10 minutes. After 10 minutes add 2 tbsp cream in it and cook it for more 5 minutes.

After 5 minutes add 1 tsp kasoori methi in it and turn off the flame.

Now take a serving plate,put all the balls in it and than put all the gerebi upon it. and garnished it with cream and coriander leaves.

TADA MALAI KOFTA IS READY.
