Veg Biryani | veg dum biryani

This is very tasty  Veg Dum Biryani Recipe. This veg dum biryani is very tasty and very easy to cook at home.


Preparation – 10 minutes

Cook – 50 minutes 

Ready In – 1 hour

Serve for – 4 peoples


  • Basmati rice – 350 gm (washed)
  • Chopped potato – 2
  • Chopped french beans – 100 gm
  • Chopped cauliflower – 100 gm
  • Chopped carrot – 1 medium
  • Green chili – 4
  • Chopped ginger – 2 inch
  • Garlic cloves – 12 (peeled)
  • Mint leaves – 1 cup
  • Coriander leaves – 1 cup
  • Fresh or frozen green peas – 50 gm
  • Soya chunks – 20 gm (soaked in hot water and squeez it to drain the water)
  • Paneer cubes – 150 gm
  • Curd/yogurt – 350 gm
  • Bay leaves – 2
  • Cinnamon stick – 2 inch
  • Black cardamom – 1
  • Green cardamom – 4
  • Mace/javitri – 1
  • Fried onion – 4 large (deep fry in oil until it turns golden brown)
  • Cumin seed – 1tsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp
  • Shahi biryani masala powder – 3 tbsp
  • Garam masala powder – 1/2 tsp
  • Salt to taste
  • Food color – 1 tsp (orange)
  • Ghee – 4 tbsp
  • Cooking oil – 2 tbsp


For making veg dum biryani, First of all take a blending jar and add 3 green chili, 2 inch ginger, 12 garlic cloves, 1/2 mint leaves and 1/2 coriander leaves. Now add 4 tbsp water and blend them into smooth green paste.

Now turn on the flame and boil 2.5 liter water in a pan. Once the water start boiling add washed 350 gm basmati rice in it and than add the whole spices like  bay leaves, cinnamon, black cardamom and green cardamom.(Crush the cardamom before adding), Now add 1 tsp salt and stir it. Now cover the pan and let it boil on medium flame.( Turn off the flame once the rice cooked 70%)

Now on the other side heat a dark pan , add 1 tbsp oil and let them heat. Now add 1 tsp cumin seed and fry it for 5 seconds. Now add potato , cauliflower and Carrot and fry it on medium flame for 1 minute. Add 1 tsp salt to cook the vegetables faster.

After 1 minute add green peas and paneer , mix it and fry it for 1 minute.Than add soya chunks in it and fry it for more 1 minute . After 1 minute add beans and stir it fry it for more 20 seconds. Now add the blended green paste in the fried vegetables and mix it well. Now add salt to taste(remember we already had added salt)  and cook it for more 1 minute on low flame. After 1 minute turn off the flame.( we have to cook the vegetables for only 7-8 minutes or 30%)

Now on the other side once the rice cooked 70% turn off the flame and drain the water from rice and remove all the whole spice.( we only want whole spices  flavour).

Add curd/yogurt in the fried vegetables, 1/2 tsp turmeric powder , 1 tsp red chili powder , 1/2 tsp garam masala powder , 3 tbsp shahi biryani masala powder and than 1/3 portion of fried onion and mix it well.


Now sprinkle 2 tbsp ghee and than add 2/3 portion of 70% cooked rice and spread it. Add 1/2 tsp food color and sprinkle the little fried onion than sprinkle little mint leaves and coriander leaves. Again add 1 tbsp ghee and than we will add the remaining rice and spread it.


Now add 1/2 tsp food color and sprinkle 1 tbsp ghee , sprinkle the remaining coriander and mint leaves and finally add the remaining fried onion.

Now cover the pan properly with aluminium foil paper or you may use dough, turn on the flame to medium and cook it for 8-10 minutes. After 10 minutes reduce the flame to low and cook it for more 10 minutes. 

10 minute later, heat a tawa on other stove and once the tawa heated put the pot on tawa and cook it for more 10 minutes on medium flame.

After totel 30 minutes of cooking,  VEG DUM BIRYANI IS READY TO SERVE.
